How to convert cups to grams

A cup measures volume, a gram measures weight, so there is no single factor: you need the weight of one cup of the ingredient in front of you. Multiply the number of cups by that weight. The figures here are the USDA’s measured weights for one US cup, from its FoodData Central database.

For 3 cups of all-purpose flour at 125 g a cup: 3 × 125 = 375 g. For 1½ cups of granulated sugar at 200 g a cup: 1.5 × 200 = 300 g. The same 1½ cups of rolled oats would be only 121.5 g, because oats are full of air.

Dry ingredients vary with how the cup is filled. Spooning flour into the cup and levelling it gives a lighter cup than scooping it straight from the bag, and brown sugar is measured packed down. USDA lists powdered sugar at 120 g unsifted but 100 g sifted, a 20% difference from technique alone. When a recipe gives grams, weighing is the reliable route.

How to estimate cups to grams in your head

Memorize three anchors: a cup of flour is about 125 g, a cup of sugar about 200 g, and a cup of butter about 225 g (two US sticks). Most baking amounts are halves, thirds and quarters of those: half a cup of sugar is 100 g, a quarter cup of butter is about 57 g.

For liquids that behave like water, a cup is close to 240 g. Milk comes in at 244 g, and anything thick and sugary such as honey is far heavier, 339 g a cup.
